I first made these fudge pops a year or two ago. They're delicious and dairy-free! Their creaminess comes from avocado. They're very easy to make -- just six ingredients and three steps. Vegan Fudge Pops
1 large, ripe avocado (about 1 cup flesh)
1-1/2 cups unsweetened almond milk
1/2 cup pure maple syrup
1/3 cup cocoa powder
1 tablespoon pure vanilla extract
pinch of salt
2) Combine all ingredients in a blender container. Blend until smooth.
3) Pour mixture into 8 ice pop molds. If you have any leftover mixture, enjoy as is. It's like pudding!
4) Freeze pops for at least 8 hours.
