I used an organic spelt flour 9" pie shell by Wholly Wholesome and I think it's my favorite pre-made pie shell ever. Quite honestly, I don't make a lot of quiches, so we'll have to see how it goes tomorrow when I reheat it. I did skip making my own crust and bought a spelt crust from Whole Foods (trans fat-free). I'll let you know what the result is. When making your own pie crust, I think the key is to pre-bake the crust partially before filling it. That might help prevent sogginess. As a child, there was a foundation on an old house or shack deep on the country property and I used to love to venture through the brush to find the blooming daffodils that outlived the structure. I don't know why I never thought to move them but if I had, that spring memory just wouldn't be the same.<br /><br />I hope you have a wonderful Easter day!
